Our family loves family traditions and every Sunday morning we make waffles or pancakes! This is originally a waffle recipe but it works well for a chewy hearty pancake.

Oat Walnut Waffles

  • 1/2 cup raw walnuts, soaked
  • 2 cups water, divided 
  • 4 medjool dates, pitted
  • 2 cups rolled oats 
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • Note: Makes two six-inch round waffles.

Instructions

  1. Soak walnuts in a small bowl overnight in the fridge.
  2. Drain water and place in a high-powered blender with one cup of water. Blend for about one minute until liquified. Then add in your dates and blend. Add the rest of the ingredients with the remaining cup of water and let stand for a few minutes.
  3. Set waffle iron dial to medium heat and baste with a high-heat oil (avocado or grapeseed oil works). Pour in batter until it fills to the edges of the waffle iron. Cook for at least 5 minutes. The recipe makes enough for two six-inch round waffles. 
  4. Topping suggestions: Serve hot with Earth Balance butter, maple syrup, applesauce, almond butter, fresh berries and bananas!

Call to Action

Medjool dates and walnuts are delicious and full of vitamins, minerals, and phytochemicals. They are part of the original diet plan. "And the Lord God commanded the man, saying, of every tree of the garden thou mayest freely eat" (Genesis 2:16). Imagine what they must have tasted like at the dawn of creation and what they will taste like in heaven.
