Start the new year clean and simple! If you’re dealing with food allergies or other health issues, here is a simple, delicious recipe. This recipe is seed oil-free, gluten-free, sweetener-free, and soy-free (unless soy milk is used).

Almond Flour Biscuits

Ingredients

  • 1 cup plant-based milk
  • 1 1/2 teaspoons lemon juice or apple cider vinegar
  • 1 1/2 cups almond flour
  • 1 cup chickpea (garbanzo) flour
  • 4 tablespoons tapioca flour
  • 1 tablespoon aluminum-free baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 425 F.
  2. Mix milk and lemon juice (or apple cider vinegar) together, set aside for 5 minutes.
  3. Whisk dry ingredients together, then add to milk. Mix until blended; it will look like a thick batter.
  4. Scoop onto a non-stick baking sheet (or use parchment paper or a silicone baking mat) to form 12 smaller biscuits or 6 larger biscuits. Bake 9-15 minutes or until golden brown on the bottom. Remove from oven and let the biscuits rest 5 minutes.
  5. Then serve and enjoy.

Call to Action

God has given us the foods of the earth for our health and wellness. As we start a new year, let us take note of the foods and drinks we consume. For optimal health, consider reducing or eliminating refined foods (sugars, oils, meat, and meat analogues).

“And God said, ‘See, I have given you every herb that yields seed which is on the face of all the earth, and every tree whose fruit yields seed; to you it shall be for food.’”
