This green sauce is traditionally made in a clay pot and blended with a wooden hand masher or a stone grinder, which elevates the flavor. As a child, I never complained about eating greens because they tasted so yummy when my mom made them this way. Now my kids look forward to this sauce with their pasta, rice, or roti. You can use greens of your choice, like baby Spinach, Kale, Malabar spinach, or even mustard greens.
Indian Greens Sauce with Tofu

Ingredients

- 1 bunch or 1 pack (small) of fresh spinach
- 1 pack firm tofu (cubed)
- 1 medium purple onion (roughly chopped)
- 1 Roma tomato (roughly chopped)
- 1-inch fresh ginger or 1/4 teaspoon ginger powder (sliced)
- 1-2 garlic cloves or 1/4 teaspoon garlic powder (sliced)
- 1 tablespoon whole coriander seeds or 1/2 tablespoon coriander powder
- 1-2 whole cardamom pods
- 1/2 teaspoon fennel seeds
- 1/2 teaspoon smoked paprika or cayenne pepper (optional)
- 1/4 cup of coconut milk or 1 tablespoon of coconut cream
- 1-2 teaspoons of avocado oil
- Celtic salt to taste
Instructions
- First, blanch the spinach to retain its fresh, vibrant green color.
- In a saucepan, add 1-2 teaspoons of avocado oil, then add fennel, cardamom, coriander, onion, tomato, ginger, and garlic, and sauté over medium heat until cooked, about 3-4 minutes.
- Add the blanched spinach and cook for a couple of minutes, then blend the mixture until smooth.
- Add the sauce back to the pan, then add salt, coconut cream, and tofu, and cook over medium-low heat for 3-4 minutes. (Optional: add smoked paprika or cayenne pepper)
- Serve and enjoy the warm delicacy with pasta, rice, or chapati.

Call to Action
Among the many herbs I use daily for cooking, coriander seeds are particularly notable, not only for their numerous health benefits—such as aiding digestion, regulating blood sugar, boosting immunity, detoxifying the body, enhancing liver function, supporting weight loss, being rich in antioxidants, possessing anti-inflammatory properties, lowering blood pressure, preventing cold and flu, fighting food poisoning, healing mouth ulcers, strengthening bones, curing smallpox, improving vision, preventing acne and pimples, and stimulating hair growth—but also because Jesus describes "manna" that He provided to the Israelites in the wilderness as being made from "coriander seeds" (see Exodus 16:31 and Numbers 11:7).
No wonder it has so many health benefits. Manna means "bread of heaven" (Exodus 16:4), and Jesus called Himself the "bread of life" (John 6:35), who came to earth from heaven to save us from our sins. Jesus said in Matthew 4:4, "It is written, Man shall not live by bread alone but by every word that proceedeth out of the mouth of God.”
Jesus is the Word of God, which we need to consume every day more than physical food. Will you join me in esteeming the Word of God more than our necessary food (Job 23:12)?
