Here’s a delicious, healthy, and satisfying granola almond breakfast. Serve with berries and a grateful heart!

Maple Almond Granola (makes 10 cups)

  • Prep Time = 10 minutes
  • Bake Time = 50-60 minutes

Ingredients

  • 4 cups organic rolled oats*
  • 2 cups sliced almonds (natural or blanched)*
  • 1 1/3 cups almond flour*
  • 1/2 cup flax meal*
  • 1 teaspoon salt
  • 1 1/3 cups maple syrup or honey (or less)
  • 1/3 cup melted coconut oil*
  • 1/3 cup water
  • 2 tablespoons vanilla or 1 tablespoon almond extract
  • Optional: 1/2 cup +/- dried fruit
  • Optional: 3 tablespoons chia seeds

Instructions

  1. Turn oven to 300°.
  2. Mix all ingredients together, except dried fruit, and spread out on two cookie sheets. If using dark cookie sheets, use parchment paper.
  3. Bake for approximately 50-60 min, stirring every 10 minutes and every 5 minutes for the last 15 minutes. Additionally, rotate the cookie sheets up and down onthe oven racks every time you stir.
  4. Remove from the oven when it looks light golden brown. Leave on a cookie sheet to cool; it crisps up as it cools.
  5. When cooled, add dried fruit.

*Tips

  • Use organic rolled oats, as non-organic oats have higher levels of glyphosate and pesticide residue.
  • If dealing with a nut allergy, you can substitute sunflower seeds, pumpkin seeds, or a mix of both for the sliced almonds.
  • If dealing with a nut allergy, you can substitute 1 cup of oat flour for the almond flour.
  • I prefer golden flax over brown flax. Golden flax has a more mellow/neutral flavor.
  • If I use coconut oil, I use organic, virgin coconut oil, or avocado oil.
  • If you don’t want to use oil, you can substitute a thin nut butter, like cashew butter.
