Are you longing for warmer days? This raw raspberry cheesecake is a great treat to remind you of warmer days ahead. It is easy to make and delicious.

Raspberry Cheesecake

Ingredients (Crust)

  • 3 cups of soaked cashews
  • 1 cup almonds
  • 1 cup dates (or raisins)
  • Pinch of mineral salt

Ingredients (Filling)

  • 1/3 cup unsweetened vanilla cashew milk
  • 1/2 cup maple syrup or coconut sugar
  • 2 cups of frozen raspberries
  • Pinch of mineral salt

Instructions

  1. In a food processor place almonds, dates (or raisins) and a pinch of salt. Blend until coarse.
  2. Line a 9.5/9.5 baking tray with parchment paper. Flatten crust into the tray. You can place a little coconut oil on a spoon so that the crust will not stick to it.
  3. Add filling ingredients to food processor and blend. Pour into baking tray.
  4. Add about one cup of frozen raspberries to the top. Add shaved chocolate (or carob) on top.
  5. Let freeze for 6 hours or overnight.

Try this dessert with raspberry sauce on top! Enjoy!
