Are you longing for warmer days? This raw raspberry cheesecake is a great treat to remind you of warmer days ahead. It is easy to make and delicious.
Raspberry Cheesecake
Ingredients (Crust)
- 3 cups of soaked cashews
- 1 cup almonds
- 1 cup dates (or raisins)
- Pinch of mineral salt
Ingredients (Filling)
- 1/3 cup unsweetened vanilla cashew milk
- 1/2 cup maple syrup or coconut sugar
- 2 cups of frozen raspberries
- Pinch of mineral salt
Instructions
- In a food processor place almonds, dates (or raisins) and a pinch of salt. Blend until coarse.
- Line a 9.5/9.5 baking tray with parchment paper. Flatten crust into the tray. You can place a little coconut oil on a spoon so that the crust will not stick to it.
- Add filling ingredients to food processor and blend. Pour into baking tray.
- Add about one cup of frozen raspberries to the top. Add shaved chocolate (or carob) on top.
- Let freeze for 6 hours or overnight.
