As a child, I relished this creamy, nutritious, and protein-packed mung bean dessert at birthdays, weddings, and other celebrations; it's a true delicacy.
Mung Bean Dessert (4-6 bowls)

Ingredients
- 1 cup split mung beans (dry roasted)
- 1 cup coconut/cashew milk (fresh)
- 1/8 cup cashew pieces, raisins & coconut shreds
- 1/4 cup of coconut sugar/date sugar/agave (may add more according to taste)
- 1/2 teaspoon cardamom powder (freshly crushed)
- 3 cups of water
- 2 tablespoons avocado/grape seed oil
- A pinch of Celtic salt

Instructions
- Dry roast split mung beans on a low flame until they're aromatic. Cook the roasted beans in 3 cups of water for 10-15 minutes on medium heat, or pressure cook until the beans are cooked.
- While the mung bean is cooking, add 2 tablespoons of oil to another pan and fry cashews, raisins, and shredded coconut. Add the coconut last to avoid burning.
- Pour 1/2 a cup of water into the fried cashews, raisins, and coconut mix. Add the sweetener and coconut milk, and mix until they're combined.
- Allow the mixture to cook by stirring for 2-3 minutes; you can adjust the consistency based on preference by adding more warm water.
- Add the cooked mung beans, a pinch of salt, and cardamom powder to the coconut milk mixture and cook for 1-2 minutes.
- Serve and enjoy the warm delicacy.
