Did you know that the average American only gets about 1 1/2 cups of vegetables a day? That quantity is 3 servings of cooked veggies, and only 1.5 servings if they are raw. To support our immune system and provide the minerals and fiber that form a foundation of healthy nutrients for healing, we need at least 6 servings a day. This Quick Stir Fry is a great, tasty way to increase our vegetable intake.
Quick Stir Fry (serves 4)

Ingredients

- 1 cup soy curls
- 2 cups water
- 2 teaspoons vegan chicken-style seasoning
- 1 tablespoon light olive oil
- 1 onion, cut thinly
- 2 cloves garlic, crushed
- 2 carrots, peeled and cut diagonally into very thin slices
- 1 stalk celery, sliced thinly on the diagonal
- 2 cups green cabbage, sliced into thin shreds
- 2 teaspoons Bragg's Aminos
- 1 teaspoon chicken-style seasoning, or to taste
- Juice of one fresh lemon

Directions
- Soak soy curls in water and 2 teaspoons of vegan chicken-style seasoning. Prepare all the other ingredients before starting to cook.
- Place oil in a non-stick pan over medium-high heat. Brown the drained and softened soy curls.
- Add the onion and stir constantly while adding ingredients. When onions are slightly softened, add garlic and keep veggies moving.
- In 30 seconds or so, add the carrots and celery.
- Add 1 or 2 teaspoons of water if needed to keep the pan from burning as the veggies are cooking. When carrots have just started to soften, add the cabbage and continue stirring until the cabbage wilts.
- Season with Bragg's and chicken-style seasoning. Drizzle with lemon juice just before eating.
- Consideration: Good over brown rice, whole grain noodles, or just on their own! Variation: Feel free to add 8-10 oz. of toasted and seasoned extra firm tofu cubes in place of soy curls. An air fryer is a quick way to make crispy tofu. A drizzle of Bragg's Aminos, some chicken-style seasoning, and garlic powder sprinkled on them is a simple seasoning idea.

We find that in Genesis 3:18 (KJV), God says, “…thou shalt eat the herb of the field.” Before sin entered our world, vegetables were the assigned diet for animals, but God understood that the mineral and phytochemical richness of these plants was crucial for human health. Today, we recognize that foods high in minerals and fiber—such as the leaves, stems, and flowers of plants like chard, celery, and broccoli—are essential for our well-being. These vegetables help create a healthy internal environment that reduces the risk of colon and other cancers, provides numerous nutrients with minimal calories, and supports optimal immune system function.
