  • 1–2 tablespoons olive oil
  • 1 large onion, petite diced
  • 4–5 fresh garlic cloves, minced

  • 2 cups sweet potato, petite diced
  • 1 1/2 cups red lentils
  • 4 cups vegetable stock
  • 2 cups water
  • 1 teaspoon salt
  • 1/4 teaspoon turmeric
  • 1/8 teaspoon crushed red pepper flakes
  • 14–15 ounce can of coconut milk
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon Better-than-Boullion (Vegetable Base)
  • 1–2 cups fresh kale, finely chopped

Instructions

  1. In a saucepan, heat olive oil over medium-high heat. Sauté the onion and sauté until soft.
  2. Next, add fresh garlic, ginger, turmeric, crushed red pepper, and salt. Stir and cook until fragrant.
  3. Add sweet potatoes, red lentils, broth, water, and Better-than-Bouillon. Bring to a boil, then lower the heat and simmer with a lid for 15-20 minutes.
