Eating healthy isn’t always easy but these cookies are so good that you won’t even know that they don’t have the dairy, eggs, and guilt. You'll devour them before you even have an opportunity to take a picture.

Chocolate Chip Cookies (makes 24 cookies)

  • Prep Time = 20 minutes
  • Baking Time = 10 minutes
  • Total Time = 30 minutes

Ingredients

  • 1/2 cup coconut oil, solid but scoop-able
  • 1 1/4 cups light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 1/4 cup oat milk
  • 1/4 cup unsweetened applesauce
  • 2 1/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups chocolate (or carob) chips

Instructions

  1. Preheat oven to 375 degrees (F). Line a large baking sheet with parchment paper or a silicone mat and set aside.
  2. In a large bowl whisk together the coconut oil, brown sugar, and vanilla, beating until well combined. Add in the oat milk and applesauce and whisk until well combined; set aside. In a separate bowl combine the flour, baking soda, and salt; whisk well to combine.
  3. Add the dry ingredients into the wet mixture and using a wooden spoon or spatula, stir until ingredients are combined. The batter will be very thick! Fold in the chocolate (carob) chips.
  4. Scoop tablespoon-sized mounds of dough onto the prepared cookie sheet, leaving a few inches between each cookie for spreading. Bake for 9 to 10 minutes, or until the edges are golden and the centers have set. Cool cookies on the baking sheet for 15 minutes before transferring them to a cooling rack.

Whoever said that healthy eating couldn’t be delicious clearly hasn’t tasted these amazing chocolate chip cookies that are plant-based and very delicious. These cookies are moist as well as chewy.
