This dessert is very easy to make and tastes delicious. Guess what? These brownies are so chewy and satisfying that your guest won’t believe that they are made with black beans!

Brownies Surprise (makes 15 brownies)

Ingredients

  • 2 flax eggs (6 tablespoons water mixed with 2 tablespoons ground flax seed)
  • 2 cans (15-ounce) of canned black beans rinsed and drained
  • 1/2 cup of melted coconut oil
  • 2 teaspoons vanilla extract
  • 1/2 cup all-purpose flour
  • 3/4 cup cocoa (or carob) powder
  • 1 cup date sugar (or of choice)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup vegan chocolate or carob chips

Instructions

  1. Prepare your flax eggs by mixing 2 tablespoons of ground flaxseed with 6 tablespoons of hot water. Let it sit for a few minutes to become gooey.
  2. Preheat the oven to 350°F. Spray a 9×9 square dish with non-stick spray and line it with parchment paper so that it is overhung on either side. Set it aside. 
  3. Drain and rinse the black beans and then add them to a food processor along with your flax eggs, coconut oil, and vanilla extract. Process until well mixed.
  4. Transfer the mix to a mixing bowl and add in the all-purpose flour, cocoa (or carob) powder, sugar, baking powder, and salt. Mix into a thick batter.
  5. Add the chocolate (or carob) chips and fold them in.
  6. Transfer to your prepared 9×9 square dish and smooth down.
  7. Sprinkle more chocolate (or carob) chips directly on top of the brownies.
  8. Bake for 40 minutes. The tops of the brownies should be shiny, cracked, and dry when finished.
  9. Allow to cool for 10 minutes before lifting the brownies out. Use the overhanging parchment to remove the brownies from the dish and place them on a cutting board. 
  10. Allow to cool completely before cutting into squares.
