Have you ever heard someone say, “Eat the rainbow”? The more colors on our plate, the greater the variety of phytonutrients we consume. Phytonutrients are unique nutrients, only found in plant foods, that give foods their color and include a wide variety of antioxidants. Sulphur-containing vegetables, like those in the cabbage family, are powerful in preventing a wide variety of cancers. This recipe combines two colors of cabbage along with carrots for a splash of color on your table and some extra beta carotene from the carrots. The beta carotene helps with skin integrity and night vision, among other things.

Tri-Color Coleslaw

Ingredients

  • 2 cups green cabbage, sliced very thin (I use a Mandolin slicer)
  • 2 cups red cabbage, sliced very thin
  • 2 cups carrots, grated or sliced into longer, narrower strips
  • See the directions below for the ingredients for the dressing

Directions

First, toss thoroughly to mix the vegetables. Then toss lightly with the following creamy dressing:

  • 1/2 cup soy mayonnaise
  • 1/2 teaspoon celery salt
  • 1 teaspoon seasoned vegetable salt

Finally, garnish with thinly sliced scallion tops and enjoy!

Call to Action: Eat the Rainbow & Remember His Promises

Foods in the Brassica family include broccoli, cabbage, Brussels sprouts, kale, collards, and cauliflower. These foods have high levels of glucosinolate, which fights cancer development in our bodies. Try to include at least one serving of this vegetable group in your meals daily. It’s a simple and wonderful way to support our body’s defenses. This salad helps to build your rainbow of brightly colored fruits and vegetables that provide essential phytonutrients for optimal health.

After the flood, God put a rainbow in the sky (Genesis 9:13) as a symbol of His promise to never destroy the earth with water again. And at the end of the Bible, in Revelation 4:3 and Revelation 10:1, the rainbow appears again as the symbol of His everlasting covenant with us. Let’s remember His wonderful promises to us every time we “eat the rainbow” on our plates.
