If there is one Indian recipe to learn and try, "this one" Indian sauce is the one.
One Indian Sauce (4-6 servings)
- Preparation time: 5 minutes
- Cooking time: 5-10 minutes
Ingredients
- 8 ounces of cooked/canned legumes or 2 cups of steamed vegetables/sauteed mushroom (optional)
- 1 medium purple onion finely chopped
- 2 medium juicy tomatoes freshly pureed
- 2-inches ginger crushed (using mortar and pestle)
- 2 garlic cloves crushed (using mortar and pestle)
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon of Kashmiri chili powder/paprika powder
- 1/8 teaspoon turmeric powder
- 1/4 teaspoon of garam masala powder
- Celtic salt as needed
- 2 tablespoons grapeseed oil
- Handful of finely chopped cilantro or parsley (herb of your choice)
- Water (not more than 1/4 cup)
Directions
- Heat oil in a heavy-bottom pan over medium heat. Once hot, add crushed ginger and garlic and cook for a minute.
- Add the finely chopped onions and cook for 3-4 minutes, stirring often, until they are light golden brown in color.
- On low heat, add all the spices (turmeric, Kashmiri chili, garam masala, coriander, and salt) and allow them to cook until well combined.
- Add the pureed tomato and cook for 5-6 minutes or until oil separates on the sides of the masala (keep sauteing until the moisture evaporates and you see trace amounts of oil oozing on the sides of the masala); in other words, until it is well done or cooked completely.
- Add the cooked legumes, steamed vegetables, or sauteed mushrooms and cook for 2-3 minutes. You can skip this step and still enjoy just the sauce.
- Garnish with fresh herbs of your choice. Enjoy this simple yet delicious sauce with quinoa, rice, or chapati.
