Fall is just around the corner! Enjoy this warm, comforting soup, perfect for those chilly days. It's also a wonderful way to share kindness with friends, family, or neighbors who might be feeling a bit under the weather.

Chickee Noodle Soup (serves 8)

Total time: 45 minutes

Ingredients

  • 4 cloves minced garlic
  • 1/2 cup chopped onion
  • 1 portobello mushroom, peeled and diced
  • 3 quarts water
  • 2 large carrots, diced
  • 1 cup frozen peas
  • 1 teaspoon thyme
  • 1 teaspoon marjoram
  • 1 teaspoon paprika
  • 2 teaspoons Italian seasoning - or- 1 teaspoon oregano + 2 teaspoons rosemary
  • 1/3 cup nutritional yeast flakes
  • Salt to taste
  • 4-8 ounces fettuccine noodles (wheat or gluten-free), broken in 1/3’s (can use any type of pasta; for gluten-free, I like the Jovial brand)
  • 1-2 teaspoons lemon juice 
  • 1/4 cup margarine
  • 1/4 cup water
  • 1/4 cup coconut milk
  • 1/8 cup cornstarch
  • Prepared soy curls (optional—see below)

Instructions

  1. Sauté onion, garlic, and mushrooms together. Transfer to a large pot, add water, carrots, peas, spices (thyme, marjoram, and paprika), and nutritional yeast flakes, and cook until the carrots are almost tender. Add noodles.
  2. Seasoned soy curls, lemon juice, and finish cooking until all is tender. Mix water, coconut milk, and cornstarch until smooth, then add to the soup; simmer until thick and bubbly. 
  3. Serve with salad and crusty bread.

Seasoned Soy Curls Ingredients (yield: approximately 1 cup)

  • 1/2 cup dry soy curls (break larger pieces)
  • 3/4-1 cup water or vegetable broth
  • Vegan chicken-like seasoning 
  • 1-2 tablespoons avocado oil (optional)
  • Salt to taste 

Seasoned Soy Curls Instructions

  1. Add soy curls to a skillet and add water or broth.
  2. Simmer to rehydrate, letting the soy curls soak up the liquid.
  3. Add vegan chicken-like seasoning and sauté with a little avocado oil until lightly browned and slightly firm.
  4. Lightly salt.
  5. Add to soup.
