Wet Ingredients

  • 1 1/4 cup water
  • 1 cup onion, finely chopped

  • 1 tablespoon olive oil
  • 1/2 cup cannellini beans
  • 2 tablespoons Bragg Liquid Aminos
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano, dried
  • 1/2 teaspoon rosemary, dried
  • 1/8 teaspoon crushed red pepper
  • 1 teaspoon salt
  • 1/4 teaspoon smoke powder (optional)
  • 1/4 teaspoon fennel, ground

Dry Ingredients

  • 2 cups vital wheat gluten flour
  • 1/3 cup oat flour
  • 2 tablespoons nutritional yeast
  • 3 tablespoons dried mushrooms, ground

Broth

  • 8 cups water
  • 1/4 cup Bragg Liquid Aminos (soy sauce)
  • 1 bay leaf (optional)
  • Sprig (2-4 inch piece) of fresh rosemary (optional)
  • Sprig (2-4 inch piece) of fresh oregano (optional)

Instructions

  1. Sauté onion until soft; add garlic and cook for a minute.
  2. In a blender, combine the wet ingredients, including the sautéed onion and garlic. Blend until smooth and set aside.
  3. In a large mixing bowl, combine the dry ingredients.
  4. Next, combine wet and dry ingredients. Stir until it forms a dough. Knead dough for about 5 minutes.
  5. Prepare broth and bring to a boil.
  6. In the meantime, cut out burgers with a cutter.
  7. Add one burger at a time to the broth. Let it boil for about 1 minute, stirring to make sure they do not stick to the bottom of the pan.
  8. Lower heat to a simmer.
  9. Simmer for about 45 min.
  10. Let cool in broth.
