Are you looking for a granola recipe that tastes sweet yet contains no refined sugar or oil? Here is one that can satisfy a sweet tooth in a healthy way.

Banana Nut Granola

Ingredients

  • 1 1/4 cups dates
  • 1/2 cup water
  • 2 bananas
  • 1 tablespoon vanilla
  • 1 1/2 teaspoon salt
  • 10 cups rolled oats
  • 1/2 cup (or more or less based on preference) of each of the following: chopped nuts, seeds, and coconut date pieces

Instructions

  1. Bring water (1/2 cup) and dates to a boil in a covered saucepan. Remove from heat, let sit for 5 minutes, then blend with the bananas and vanilla. (wet ingredients)
  2. Separately, mix the oats and salt, then add the wet ingredients and stir until combined.
  3. Spread on 2 cookie sheets or baking dishes with edges (to help keep the oven clean when stirring the granola).
  4. Bake at 225° for 2 hours (or until done), stirring every 30-40 minutes. Add the nuts, seeds, and coconut when finished baking.
  5. When eating the banana nut granola, add dates, fresh banana, or any other desired toppings. Enjoy!
  6. Note: If you are making more than 1x the recipe, you will probably need to extend the baking time and maybe adjust the temperature. For reference, the photos show 3x the recipe.
