This salad is high in protein and antioxidants. It's simple, delicious, and I think you'll really like it!

Greek Salad

Ingredients

  • 1 cucumber
  • 5 Roma tomatoes
  • Juice of 1lemon
  • Half of a red onion chopped
  • 1 block of extra firm tofu drained and cubed
  • 1 1/2 teaspoon oregano
  • 1 teaspoon salt
  • 2 cloves garlic minced
  • 2 tablespoons olive oil (optional)

Instructions

  1. Add the cut vegetables and tofu to a medium bowl
  2. To make the dressing combine the olive oil, minced garlic, oregano, and salt to a small bowl and mix well.
  3. Add the dressing to the salad. Mix well.
  4. Allow the salad to marinate for at least an hour.
  5. Enjoy
